Strip loin medallions are cut from the short loin, the upper, rear portion of the animal, where other tender steaks such T-bone and tenderloin are cut from.

Strip loin comes from the upper portion of the short loin, and is called "strip" loin because, when removed from the bone, the resulting cut is a thick, long strip. Often cut into steaks, called, you guessed it, strip loin steaks, they are also known as New York steaks.

When a thick, strip loin steak gets cut in half, width wise, the two pieces are referred to as strip loin medallions.
